because every Monday needs a bite shot. no but seriously, a bite shot always wins BUT also, having a muffin on that’s really a cupcake is definitely a winner in my book 👏🏼

Strawberry Shortbread Cupcakes
1 C of splenda Monk Fruit
2 Eggs
2 C of Almond Flour
1 tsp of baking powder
1 tsp of vanilla extract
1/3 C of Almond Milk
1/4 C of Coconut Oil
1 C of chopped strawberries

Mix together the monk fruit and eggs.
Then add in the almond flour and baking powder. Mix well and then add the almond milk, coconut oil, and vanilla extract. Stir in strawberries. Scoop batter into a cupcake tin and bake at 350 for 15-18 minutes. Top with strawberry cream cheese frosting (just cream cheese frosting mixed with strawberries. Enjoy!
