Sweet Cinnamon Tofu Rolls
for the dough
1 C of Almond Milk
1/4 C of Mori-Nu Silken Tofu Firm
1 packet of Fast Rising Yeast
1 Tbsp of Coconut Sugar
3 C of All Purpose Flour
for the filling
1/4 C of Melted Vegan Butter
2 Tbsps of Cinnamon
2 Tbsps of Coconut Sugar
for the icing
3/4 C of Powdered Sugar
2 Tbsps of Almond Milk (add more if you want a runnier icing)
In a microwave safe bowl, add the almond milk and morinutofu, mix thoroughly with a fork until well blended. Then heat the mixture for 2 minutes or until warm. Add yeast to the top and set aside for 10 minutes to let the yeast rise.
After the 10 minutes, stir in the coconut sugar and mix. Pour into a large mixing bowl. Add in your all purpose flour, 1 cup at a time, stirring together until your dough forms. Grease another large bowl with cooking spray and set the dough in this bowl. Cover with plastic wrap and set on the counter for 1 hour. The dough should double in size.
After an hour, preheat your oven to 350 degrees. Flour a large surface and place the dough on the surface. Using a rolling pin, roll dough out until it is completely flat. Using a knife, cut the dough to make a perfect rectangle. Make the filling mixture and brush it over the dough. Roll dough to make your cinnamon rolls. Using kitchen scissors or dental floss, cut cinnamon rolls (about 1-1.5 inch thick) and lay in a greased 9 x 13 pan. Brush more of the filling mixture on top and place in the oven.
Bake for 20-25 minutes, or until golden brown.
Remove from the oven and spread your icing all over! You can wait until they are cooled if you prefer, but we like the cinnamon rolls hot and the icing melted!
